To understand when you might prefer one over the other:

Microsoft 365 Apps gets new features more frequently, plus more collaboration, cloud features, AI enhancements, etc. LTSC is static after launch.

For users/devices that are often offline, in secure / regulated environments, or where feature stability is more important than having the very newest tools, LTSC makes sense.
